Clover cheese scones

3 1/4 cup cake flour
3t baking powder
2T caster sugar
1/2t salt
3/4 cup salted butter, chilled and cut into cubes
250g Clover Mature cheddar, grated
1 cup buttermilk
3t thyme

Combine the flour and baking powder along with the sugar before crumbling in the butter using your fingertips until the mixture resembles bread crumbs.
Add the cheese mix through before pouring in the buttermilk, and stirring through to form a roughly shaped dough. Cover in cling wrap and rest in the fridge for 30 minutes before removing from the wrap and pressing down gently to form a rough circle about 5cm high. Using a large cookie cutter cut out rounds of the dough before placing on a greased baking tray and bake at 220C for about 20 minutes or until the outside is slightly crisp and firm and has turned a light brown. Remove the scones from the oven and allow to cool until it can be handled. Serve with butter and drizzles of honey.
