Clover Cheese Polenta

Clover Cheese Polenta 
Serves 2-3
Cooking time: 20-30 minutes 
2 cups polenta
2 ½ cups water
¼ cup parsley, chopped
1 cup Clover Cheddar cheese, grated
1/3 cup Clover Tussers cheese, grated
2 tbsp butter
Salt and pepper to taste 
Preheat the oven to 200
Bring the water to a boil and season with salt and pepper. Whisk in the polenta and allow to cook on a gentle heat for 10 miniutes. 
Add in the butter and Clover cheese and give it a good mix. 
Remove from the heat and stir in the parsey. Spoon the polenta onto a greased baking tray. 

Sprinkle over more Clover cheddar and bake for 5 minutes.

Serve warm.
