Clover Cheese Low Carb Tacos

Clover Cheese Low Carb Tacos

1cup   Clover Mature Cheddar, grated
1cup   Clover White Cheddar, grated
1   Onion, finely diced
1tsp   Smoked Paprika
1tsp   Oregano, dried
1tsp  Garlic Powder
1tsp  Cumin
500g  Beef Mince
½cup Tomato Puree
1   Tomato, cubed
½   Cucumber, cubed
½   Red Onion, cubed
1tsp   Lemon juice
1cup  Lettuce, finely shredded
1   Avo, mashed
1cup   Clover Tussers, grated
        Fresh Coriander and grilled lime to garnish

Mix the 2 Clover Cheddar cheeses together in a bowl, season with salt and pepper and divide into 6 equal portions. Lay flat on a non-stick baking mat, and bake at 180 until melted and edges begin to crisp slightly
Remove from oven and immediately place over a rolling pin to form taco shape while hot. Allow cooling completely on rolling pin before using
Add a touch of pride to a pan, then sweat onion and spices until softened and fragrant. Add mince and brown lightly, then add tomato puree and cook for a further 20 minutes until thickened and rich.
Mix the tomato, cucumber and onion, add lemon juice and season. Set aside.

Compile your tacos, starting with shredded lettuce, beef mince, followed by Tomato and Cucumber salsa. Spoon on avo mash, a generous amount of Clover Tussers, fresh Coriander and a squeeze of grilled lime juice.
