Clover Carnival funnel cakes

2 free range eggs
1 cup Clover milk
1 cup Frankies (of any kind)
1t vanilla extract
3 cups cake flour
1T baking powder
3T caster sugar
Pinch fin salt
Icing sugar for dusting
Oil for deep frying

Combine the eggs, milk, Frankies and vanilla in a large mixing bowl. In a separate bowl sift together the flour, baking powder and sugar with the salt. Pour in the wet mixture, stirring and folding to combine into the dry ingredients to form a batter.
Pour the batter into a squeeze bottle and allow to rest for about 10 minutes while heating the oil for deep-frying.
Once the oil is ready for deep-frying gently squeeze the batter into the oil, covering the surface of the oil, forming a lattice like pattern. Allow the funnel cake to cook for 30 - 45 seconds or until brown before turning over and cooking the other side in the same manner. Remove the golden funnel cake shaking off as much excess oil as possible before placing over absorbent kitchen paper.
Serve the funnel cake hot and with a dusting of icing sugar and a chilled Frankie as well.
