Clover Butro Crepes

 

Clover Butro Crepes with fresh seasonal fruit

3 Large eggs
¼ cup Clover Butro
1 cup Clover Fresh milk
1 tsp vinegar
¾ cup Cake flour
1 Tbsp Sugar
Pinch salt
1 tsp Vanilla essence
 
Filling:
250 ml Clover fresh cream, whipped
Seasonal fruit of your choice
Icing sugar to dust
 
Method:
In a large mixing bowl combine the flour, sugar and salt. Make a well in the centre and add the eggs, butro, milk, vinegar and vanilla. Mix until smooth. 
Lightly grease a frying pan. Heat to a medium heat and add a ladle of the crepe mix into the pan. Cook until the edges start to slightly lift, before flipping. Cook for a further 2-3 minutes and remove from the pan.  Repeat this until all the crepe mixture has been cooked. 
Fill ¼ of the crepe with fresh cream. Top with you favourite seasonal fruit before folding in half, and then in half again, creating a “triangle” shape. 
Dust with icing sugar and serve!
