Clover butro corned beef enchiladas
Clover butro corned beef enchiladas

6 Tortilla wraps
Left over Corned beef, sliced OR cubed
1 tbsp Butro
1 cup corn kernels
1 tin black bean, decanted and drained
2 onions, diced
1 tbsp chilli, chopped
1 tsp paprika
1 tsp Chipotle spice (optional)
Salt and pepper
Coriander
 
1 tin diced tomato
1 cup cheese, grated
 
Method:
Heat the butro in a frying pan
Add the onions and corn and cook until golden. Add the spices, chilli black beans. Cook for 8-10 minutes. Add water if the mixture is too thick. 
To assemble start by placing a layer of corned beef to the centre of a wrap. Top with the corn and ben mixture and roll up. Repeat the process for all the wraps. Place in a oven proof dish, top with the tomatoes and cheese and bake until golden. Serve warm!
