Clover Bliss black forest parfait

1 cups strawberries, halved

1 cups blueberries/ frozen blackberries
½ cup cherries, halved and pitted
½ cup raspberries
5ml vanilla paste
1 sprig rosemary, chopped
1 sprig thyme, chopped
1 ½ Tbsp maple syrup
230g mascarpone
¾ - ½ cup cup Clover Bliss Black forest
1-2 granola


Place the berries in a medium sized pan. Add the herbs, vanilla and maple syrup and cook over low heat for 30 minutes.
Once the fruit has softened, allow to cool and place in the fridge to cool down.
In a mixing bowl combine the mascarpone and Clover Bliss and mix until there are no lumps visible.
Sprinkle some granola into the bottom of a glass jar, spoon in some of the cooled berry mixture followed by a heaped tablespoon of the yogurt mixture.
Repeat the layering process and finish off with the yogurt on top. Sprinkle with extra granola and serve
