Clover Amasi macadamia and cranberry fudge

½ cup salted butter, cubed
2 cups sugar
1 cup Clover Amasi
1T Orange Blossom honey
Pinch of salt
½ cup macadamia nuts, roughly chopped
½ cup dried cranberries, roughly chopped
2 sprigs thyme, finely chopped
Smoked Maldon salt to garnish
A candy thermometer
Line a medium loaf pan with baking paper leaving a generous overhang and set aside.
In a saucepan add the butter and heat over medium heat until melted. Add the sugar, buttermilk, honey and the salt. Mix to combine until the sugar has dissolved about 2-3 minutes.
Bring the mixture to a boil and insert the candy thermometer.
Heat to 115C, it’s very important to reach this temperature as this allows your mixture to set properly. This will take about 6-8 minutes.
Quickly pour the mixture into a bowl and beat using an electric hand beater until cool and thickened( it will be thick and matte).
Fold in the nuts, cranberries and thyme. Pour into the prepared dish and smoothen the top. Sprinkle with the smoked salt and allow to set for 1 hour before cutting into squares.
