Amas-ing maize meal fishcakes
1 1/2c cooked maize meal
1 onion, finely chopped
1 tsp oil
2 tins tuna chunks
Zest and juice of 1 lemon
1/2 c chopped mixed fresh herbs (dill, coriander, parsley)
Salt and pepper to taste
1 c Clover Amasi
½ c (125 ml) seasoned cake flour
Oil for shallow frying
In a small frying pan, fry the onion until softened.
In a bowl, mix the cooked maize and onions, tuna, lemon zest and juice, herbs, seasoning and egg until well combined.
Divide mixture to form into patties. Chill in the fridge for at least 30 minutes.
Coat fishcakes in the Amasi and then into the seasoned cake flour. Repeat for a double crumb.
Heat enough oil for shallow frying in a heavy based frying pan. Fry the fishcakes in batches for +- 3-4 minutes per side or until golden. Place onto paper towel to absorb excess oil.
Serve with sweet chilli or spicy mayo sauce and fresh lemon wedges.
