Clover 3 cheese and bean Chimichangas

Clover 3 cheese and Bean Chimichangas

1 T Olive pride
½ red onion, chopped
2 spring onions, sliced
2 cloves garlic, chopped
1 chilli, chopped
1 tin baked beans in tomato sauce
1 tsp smoked paprika
½ c Clover Mature Cheddar cheese, grated
½ c Clover Tussers, grated
½ c Gouda, grated
8 tortilla wraps
Fresh coriander to serve

Heat oil in a frying pan. Fry the red onion and spring onion for 1 minute then add the chilli and garlic. Fry for another minute before adding the baked beans. Add the smoked paprika and cook for 5 minutes. Remove from the heat.
Place 2 tablespoons of the bean filling in the centre of a tortilla wrap. Top with mature cheddar, Tussers and gouda. Fold the sides of the wrap in and roll close. Use a toothpick to close the end of a wrap. Fry for about 4 minutes per side. Remove and drain oil on paper towel. Serve with coriander.
