Classic Tagliatelle Bolognese

500g Beef Mince
4T Extra virgin olive oil
2 Medium onions, roughly chopped
2 carrots finely chopped
2 celery stalks, finely chopped chopped
4 garlic, finely chopped
2 bay leaves
2 rosemary stalks
4T tomato paste
3 Cups water
Salt and freshly ground black pepper
500g Tagliatelle, cooked
Parmesan to season
Heat the oil over a medium heat. Add the mince and allow to brown before stirring and browning the other side. Add the onions and cook until completely cooked down and caramelized. Add the carrots and celery and cook until soft.
Add the garlic, bay leaves and rosemary and stir through along with the tomato paste. Cook for 1 minute before adding the water and allowing it to gently simmer and reduce. Season with salt and freshly ground black. Toss with the pasta before adding parmesan to season
