Classic Custard Malva Pudding

Malva Pudding
30ml Clover butter
half c castor sugar
1 extra large egg
1 tblsp apricot jam
1 tsp Bicarbonate of Soda
125ml (half cup) Clover fresh milk
1 cup cake flour
pinch of salt
1 tbslp vinegar

Classic Clover Custard
Cream the butter and sugar together until pale in colour and beat in the egg until well combined and add the apricot jam.
Dissolve the bicarb in the milk.
Sift together the flour and salt and add to the creamed mixture alternately with the milk mixture.
Mix in the vinegar and pour into a greased baking dish and bake for 1 hour at 180°C.
Use a cake tester or a skewer to check if the pudding is baked through and pour over Classic clover custard and serve.
