1 grape fruit
3 cardamom pods, smashed
1 cup sugar
1/4 cup elderflower cordial
1 1/2 cups water
1 free range egg white
Brut MCC to pour
Using a vegetable peeler, peel off the outer layer of the skin of the fruit, being careful not to remove the white pith which will make your drink bitter.
Add the peels to a pot along with the cardamom, sugar and water before placing over a medium heat allowing it to gently simmer until reduced by half.
Juice the remaining fruit and strain removing any pulp. Set aside.
Place the egg white in a bowl placed over a pot of gently simmering water. Add 1/4 cup of the citrus syrup and whisk until the egg white is thick and glossy holding its shape well.
In a tall glass, add ice and pour over some of the mixed citrus juice before adding 2T of the syrup. Pour in the MCC to fill the glass. Spoon some of the foam over before serving the drink.
