Chocolate Mud Cupcakes

 
250g Clover Mooi River Butter
200g dark chocolate
1 tbsp strong coffee powder
100ml milk
250g self raising flour
40g cocoa powder
200g castor sugar 
3 eggs, lightly beaten
1 tsp vanilla essence
150ml Amasi
 
for the ganache
80g milk chocolate
80g dark chocolate
100ml cream
50g Clover Butter
 
Preheat the oven to 180C. 
Melt the chocolate, butter, coffee powder and milk in a a saucepan. 
Add the sifted flour and cocoa powder into a bowl and mix in the castor sugar. Fold the chocolate mixture into the dry ingredients along with the eggs, vanilla and amasi. 
 
Scoop into a greased muffin tray lined with cupcake cases (optional) and bake for 30-40 minutes until a skewer comes out slightly moist but not dry. 
 
To make the chocolate ganache topping, melt the chocolate in the heated cream and butter. Set aside to cool and spread over over cupcakes. 
 
You could also make one big cake instead of cupcakes for this recipe.
