Chocolate Coins and Eggnog

Makes: 10
Preparation time: 20 plus chilling time
Good-quality 70% dark chocolate 2 slabs, chopped  
To decorate:
Woolworths Simply dried apple chips
Woolworths Simply toasted coconut
Woolworths peanut brittle
crushed Himalayan salt
dried cranberries  
1 Melt the chocolate in a double-boiler.
2 Pour 2 T melted chocolate into silicone or paper cupcake cups.
3 Decorate as desired and chill to set.

Preparation: 30 minutes
free-range eggs 4
cream ½ cup
maple syrup 2 T
vanilla pod 1, seeds scraped out
good-quality rum ¼ cup
vanilla ice cream, for serving
nutmeg, freshly grated, for serving
honey, for serving
1 Blend the eggs, cream, maple syrup, vanilla seeds and rum.
2 Pour into glasses, add a scoop of ice-cream to each glass, dust with nutmeg and drizzle with honey.
