1 ½ Cups Flour
1 tsp Baking Powder
½ tsp Salt
¼ tsp Baking Soda
½ cup Butter, room temperature
¾ cup Selati Demerara Sugar
½ cup Selati sugar
¼ cup Selati Icing snow
2 Large Egg Yolks
1 Large Egg
1tsp Vanilla Extract
1 cup choc cookies
 
Mix together flour, baking powder, salt and baking soda into a bowl and set aside. In a mixer on medium speed, beat the butter and sugars until light and fluffy. Add egg yolks, egg and vanilla. Beat, occasionally scraping down the sides of the bowl, until the mixture is pale and fluffy. Reduce the mixer speed and add in the dry ingredients, mixing just to blend.
Fold in the choc chips.
Roll the batter in balls and place on a prepared baking sheet, lined with baking paper. Bake cookies for approximately 10 minutes until they just golden brown around the edges. Allow to cool, which will set the cookies up.
