
Chilled Avo and Cucumber soup

Serves 4 -6
Ingredients
1 medium English cucumber peeled and chopped
2 ripe firm avocados pitted, and peeled and cut into cubes
2 spring onions with tops chopped
3 tablespoons chopped coriander
1 chilli chopped (optional)
1 large clove peeled garlic
2 cups Clover Classic Plain
2 tablespoons extra virgin olive oil
Zest of 1 yellow lemon
Juice of one yellow lemon
Salt and freshly ground pepper to taste
Method
Blend all the ingredients together in liquidiser, taste and adjust seasoning, chill and serve in bowls, topped with garnish.
The garnish
6 rashers roughly chopped crispy streaky bacon
100g crumbled Clover feta cheese
1 cup croutons
Chopped chives
A little extra olive oil for drizzling
Tip:
If you would like to thin the soup down add a little Clover milk till you get the consistency you desire.
