CHICKEN SOUP WITH DUMPLINGS

INGREDIENTS
2tbsp oil
2tbsp butter
6 chicken thighs
2 cups mirepoix (diced onion , celery, carrots)
2 garlic cloves crushed
1 boquet garni (sprigs thyme , rosemary, parsley,bay leaf tied together)
salt and pepper
2 cups chicken stock
½ cup white wine
½ cup milk
1 cup cream
1 can sweetcorn drained
store bought bread dough


METHOD:
Heat butter and oil in a saucepan . Season chicken with salt and pepper and brown the chicken, remove and set aside

In the same pan add the mirepoix and the bouquet garni, cook for 3 minutes. Add the wine and cook for 2 minutes. Add the stock and return the chicken to the pot, cover and simmer for 20 minutes, place spoonfulls of dough in the pot to make dumplings and cook for 10-15 minutes
Remove chicken and dumplings and set aside in a warm place.
Shred the chicken and add the sweet corn, milk and cream , cook for 3 minutes to warm up. Return the dumplings to the pot and Serve.
