Chicken Schnitzel with a Honey Mustard Mayo
2 large chicken breasts, butterflied
1 cup Clover Cream O’Naise
2 Cups breadcrumbs
Salt and freshly ground black pepper
For the honey mustard mayo
½ cup Cream O’Naise
2 tablespoons honey
2 tablespoons mustard
Place the chicken breasts between 2 pieces of pieces of plastic wrap and gently pound to flatten out. Brush the chicken with the mayonnaise before coating in the breadcrumbs.
Allow the schnitzels to rest for 10 minutes before placing in an oven preheated to 180C. Allow it to cook for 15-20 minutes or until the chicken is cooked and golden brown.
Season with salt and freshly ground black pepper and serve with the honey, mustard mayonnaise
