
ChewMe’s Beef Stew

INGREDIENTS
1kg stewing beef
4 tbsp Excella cooking oil (divided into two parts)
flour for coating
3 tbsp BBQ Spice
3 tbsp Steak & chops spice
3 bay leaves
1 large onion (chopped)
2 cloves garlic (grated)
1 cup beef stock
¼ cup tomato sauce
3 tbsp brown sugar
salt and pepper to taste
METHOD
Pour your flour into a bowl and coat each piece of meat with the flour making sure to dust off any access flour.
Once all your meat has been coated, add oil to a pan and set your heat to high
Add the pieces a little at a time and fry. Remove them from the pan once it has browned nicely on the outside. The meat pieces will still be raw on the inside. Make sure not to overfill your pan as this will result in the meat steaming and not frying.
Repeat this process until you’ve browned all your meat and set the meat aside until later.
Reduce your heat to low and in the same pan, add your onions and sauté for about 3 min before adding the garlic.
Fry for another 2 min before adding all your spices.
Add your meat back into the pan and stir thoroughly ensuring every piece is fully covered with spice.
Add your bay leaves, tomato sauce brown sugar and beef stock and stir once more before covering with foil and lid.
Cook the meat on the low setting for 1 hour 30 min before checking it. Do not open the pot during this time. Once cooked remove all the bay leaves.
Salt and pepper your meat and serve alongside Excella rice, salads and veggies of your choice.
