Cheesy Asparagus stuffed chicken breasts

For the chicken:
4 Woolies free range skinless chicken breast fillets

Zest and juice of 1 lime
1Tbsp Spanish smoked paprika
1Tbsp onion powder
1Tbsp garlic powder
1Tbsp woolies chicken rub
Salt & pepper

For the stuffing:
X1 410g Woolies tomato & herbs
About 100g cheddar cheese, grated
About 100g mozzarella cheese, grated
100g asparagus tips

For the crust combine:
½ cup bread crumbs
½ cup parmesan, grated
2Tbsp thyme, finely chopped

Preheat the oven to 180C. Cut a lengthwise slit on the side of the chicken breast to create a big enough pocket for the stuffing. Be careful not to cut all the way through the chicken.
Combine the zest, smoked paprika, onion powder, garlic powder, salt and pepper and season the chicken both inside and out before squeezing over the lime juice. Allow to marinade for 10- 15 minutes.
For the stuffing combine the tomatoes and cheeses. Stuff the chicken with 2-3 tablespoons of the cheese mixture along with 3-4 asparagus tips. Be careful not to overfill.
Carefully place chicken in a oven proof dish before topping with the crust mixture. Bake for 25-30 minutes and golden brown and cooked through.
Serve with Woolies crunchy summer salad.
