Cheat’s fish pie

2 T butter
2 leeks, sliced
2 cloves garlic, finely chopped
2 T flour
1 cup milk
1 cup fish or veg stock
WW 200g fresh or frozen hake fillet or angel fish, cubed
1 cup WW frozen whole green peas and sweetcorn kernels
Salt and pepper
Handful fresh parsley, chopped
1 sheet puff pastry, or phyllo pastry for the topping

Melt the butter in a saucepan. Add the leeks and garlic and saute for a minute or 2. Sprinkle over the flour and gradually add the milk and stock, whilst stirring.
Add in the cubed hake fillets along with the peas and corn. Season well with salt, pepper and chopped parley. Bring to a light simmer to cook the fish, for a minute.
Spoon the fish filling into individual ramekins or a bigger baking dish. Top with pastry of your choice (brushed with eggwash) and bake in the oven at 200°C until the pastry is golden and crispy. Serve warm.
