1kg butternut, peeled
2 medium onions, roughly chopped
2 cloves garlic, roughly chopped
1 cube vegetable stock
5ml cayenne pepper
Salt and pepper
Croutons, cream and chives for garnishing
In a large pot, melt the margarine and fry the onions, garlic and cayenne pepper until soft. Add the butternut, water and vegetable stock cube and bring to the boil. Allow to simmer for about 30 minutes or until the butternut is soft.
Remove from the heat and blend with a stick blender until smooth.
Stir in the cream and season to taste with salt and pepper. Garnish with cream, croutons and chives.
