Buttermilk Pancakes
with Salted Honey Butter

Preparation time: 10 minutes
Chilling time:  15- 20minutes
 
Cake flour 360g
Sugar 3T
Baking powder 3t
Bicarb 1½ t
Salt to taste
Buttermilk 3 cups
Milk ½ cup
Free-range eggs 3
Butter 1/3 cup, melted (Plus extra for brushing)
 
For the salted honey butter
 
Butter 250g, softened
Honey 5T, extra if needed
Salt ½ t
 
Combine the ingredients in a large bowl before blending together using a stick blender. Heat a non-stick pan over a medium heat. Using a ladle spoon some of the batter into the pan and allowing to cook for 2-3 minutes or until bubbles begin surfacing then turn over. Continue doing this with the rest of the batter. Stack and serve with the salted, honey butter with an extra drizzling of honey.
 
For the salted, honey butter: Add the butter and honey to a bowl and beat whisk using an electric hand mixer over a high speed until pale and fluffy, add extra honey if needed and whisk in. Add the salt and whisk through to combine.
