Buttermilk fudge with bacon and pecans

Streaky bacon 400g
Pecans 150g, toasted
Sugar 800g
Buttermilk 2 cups
Butter 230g
1 Preheat oven to 180°C. Place the bacon on a sheet tray and cook until crisp. About 10 minutes. Roughly chop once cooled, along with the pecans and set aside
2 Add the sugar, buttermilk and butter to a pot over a medium heat and bring to a gentle boil and cook for about 8 minutes until all the sugar has dissolved and the mixture has turned a light caramel colour.
3 Pour the mixture into a large boil and mix using an electric hand mixer on a high speed until the fudge is a matt colour and is thick. It will be cool enough to just touch without getting burnt.
4 Fold the bacon and pecans through and place in a greased dish before placing in the fridge to set for 2 hours or until completely cool and set. Cut into squares and serve.
