Burnt butter Tomato sauce for pasta

Burnt butter Tomato sauce for pasta

4 T butter

1 x 400g can chopped tomatoes
3 garlic cloves, minced
Salt and freshly ground pepper, to season
Parmesan, grated to serve
Chunks toasted ciabatta, to serve
Penne, cooked al dents to serve

Options to serve
Olives
Anchovies
Basil
Capers
Bacon

Heat the butter in a pan until golden brown and has a lovely caramel flavour and aroma.
Add the garlic and tomatoes and simmer for 30 minutes.
Season.
Add 4 T pasta water to the sauce.
Stir through the Parmesan and cooked pasta.
Spoon over the toasted bread chunks.
