For the olive breakfast tart
1 Ready-made puff pastry
1 Bottle olive pasta sauce
150g Baby spinach
50g Parmesan
4 eggs
For the 3 cheese tart
Ready-made puff pastry
1 bottle 3 cheese pasta sauce
150g sliced chorizo
150g Baby spinach
50g Parmesan
Method
For the olive breakfast tart
Preheat oven to 120’. Grease a muffin pan. Pan fry baby spinach until wilted. Cut puff pastry into circles and fit into the muffin cases. Divide the spinach between the muffin cases and top with 2-3 tbls of sauce. Crack egg into case and cover with parmesan. Bake for 15-20 min.
For the 3 cheese breakfast tart
Preheat oven to 120’. Grease a muffin pan. Pan fry baby spinach until wilted. Cut puff pastry into circles and fit into the muffin cases. Divide the spinach between each muffin case and top with sliced chorizo and 2 -3 tbsp of sauce. Top with breadcrumbs and parmesan. Bake 15- 20 min.
