
Braai’ed spicy pork chops with pineapple chilli and coriander mayo

Ingredients
8 pork chops
salt and pepper to taste
Marinade
4 Tbsp rosemary, finely chopped
4 cloves garlic, crushed
1 Tbsp black pepper
1 tsp fennel seeds, crushed
½ tsp chilli flakes
6 Tbsp olive oil
Pineapple chilli and coriander mayo
3/4 cup Clover Classic Mayo
1 fresh pineapple, diced
2 red chillies, diced
1 red onion, finely diced
2 Tbsp fresh coriander or mint, finely chopped
grated zest of 1 lime
juice of one lime
salt and pepper to taste
To serve
baked jacket potatoes (or boiled baby potatoes)
fresh coriander, chopped
side mixed salad
Cooking instructions
Mix all the ingredients of the marinade together.
Dip both sides of the chop in the marinade, cover and leave to absorb the flavours for an hour or more.
Meanwhile make the mayo by mixing all the ingredients together. Taste for correct seasoning. Allow the flavours to mingle for at least 15 minutes.
Just before serving, season the pork chops with salt and braai over medium coals.
Serve with potatoes, salad and a good dollop of mayo on the side.
Garnish with extra fresh coriander.
