Boerewors & Chakalaka stew with herb Dombolo

Boerewors & Chakalaka stew with herb Dombolo

For the dombolo:
250g Snowflake Dombolo Flour Mix
3g active dry yeast
2 Tbs dried oregano
2 Tbs dried thyme
1 Tbs garlic powder
180ml lukewarm water

For the stew:
2 Tbs olive oil

1 coil of boerewors
1 onion, chopped
2 garlic cloves, chopped
1 yellow pepper, diced
2 Tbs mild curry powder
2 carrots, peeled and grated
1 tin baked beans
1 cup water
4 Tbs chopped parsley


Method:

  1. Mix together the Snowflake Dombolo Flour Mix, yeast, oregano, thyme and garlic powder.
  2. Mix in enough water to form a soft dough, then cover with a cloth and leave to rise while you make the stew.
  3. Heat oil in a large pot with a lid then add the coil of boerewors and brown on both sides - the boerewors doesn’t have to be cooked through, just browned. Remove from the pot, then set aside.
  4. To the same pot, add onions, garlic and pepper then fry until softened.
  5. Add the curry powder then cook for one minute.
  6. Add the carrots and baked beans, Swirl the water into the tin of baked beans then add to the pot.
  7. Cut the boerewors into pieces, then add to the pot along with the parsley, then season to taste.
  8. Divide the dombolo dough into 12 pieces, then place them onto the stew, cover with a lid, then simmer gently for 15 minutes or until the dombolo have risen and are cooked through.
