Bliss Lasagne

Bliss Lasagne

Ingredients 
10-20 lasagne sheets (depends on the layers you want)
Béchamel sauce
100g butter
80g flour
750ml milk
250 Clover bliss
¼ tsp nutmeg
salt and pepper to taste

Ragu
2 tbsp oil
500g beef mince
200g pork mince
2 bay leaves
2 cloves garlic, chopped
1 large onion, chopped
2 tbsp tomato paste
1 cup beef stock
1 tin chopped tomatoes
1 tbsp sugar 
2 full cups grated cheese (mozzarella, cheddar, parmesan)

Method
Ragu
In a large saucepan, on medium to high heat fry the mince until nicely brown, breaking it up throughout. Remove from the saucepan and set aside. Reduce the heat and in the same pot, add the onion and sauté until translucent. Add garlic and bay leaves, cook for a minute then add the tomato paste and sugar. Cook for about 2 minutes before adding the meat back into your pot. Toss everything together for about 3 minutes then add the stock and tinned tomatoes. Cook on low to medium heat for about an hour to an hour and a half. The ragu will reduce and thicken.

Béchamel
In a medium saucepan on low to medium head, place your butter and melt. Stir in the flour and cook out the flour taste for about 2 minutes while stirring. Add the nutmeg, salt and pepper and stir through. Stir the milk and Clover bliss together and whisk into the butter and flour mixture a little bit at a time. Allow the sauce to fully incorporate before adding the next batch. Continue the process until your sauce has thickened but is still smooth and pourable.
Pre heat oven to 180C

To assemble, in a ovenproof dish, start with a thin layer of ragu then first layer of lasagne sheets. Follow with a generous amount of ragu, some béchamel sauce, some grated cheese then repeat the process until you have used up all of your lasagne sheets.

Top the mixture with the left over béchamel sauce then final sprinkling of the cheese. Cover with foil, shiny side down, then bake for 35-40 minutes. Remove the foil in the last 5 minutes to allow it to brown nicely on top.
