Best Ever Chocolate Chiffon Cake

3/4 cup boiling water
1/2 cup cocoa powder
1 3/4 cup cake flour
7,5ml baking powder
1 3/4 cups Selati Castor Snow
7.5 ml bicarbonate of soda
1 teaspoon salt
1/2 cup vegetable oil
7 unbeaten egg yolks
1 cup egg whites
a pinch of cream of tartar
Chocolate Ganache
100g Chocolate
100g Cream
Blend together the cocoa powder and boiling water in a cup. Stir it together until it forms a thick paste, leave aside to cool.
In a large mixing bowl, sift together the flour, baking powder, sugar, bicarb & salt. Repeat the sifting process 3 times to ensure that all ingredients are event distributed.
In a separate bowl, whisk together the egg yolks and the vegetable oil. Once they are nicely blended, combine the oil mixture with the cooled cocoa mixture.
Create a little well in the centre of the dry ingredients and pour in the wet ingredients. Mix together until you have a glossy, smooth mixture with NO lumps!
In a separate container, whisk together the cup of egg whites. When the whites are foamy, add the pinch of cream of tartar to stabilize them and continue to beat until stiff peaks form.
Gently fold the egg whites into the cake batter, please make sure that you do not over mix, the egg whites should only JUST be incorporated. These whites will give the cake a luxurious, light texture.
Pour the cake batter into a chiffon cake tin (non-greased) and bake at 160 degrees for 60 minutes or until the cake is cooked through.
When you take the cake out of the oven, flip the chiffon cake tin upside down and allow the cake to cool completely. Do not stress, it will not flop out of the cake tin!
Once the cake is completely cooled, run a clean knife between the cake and the tin and pop it out onto a clean plate.
For the ganache
Melt together the chocolate and cream over a double boiler and stir to mix together.
Pour Chocolate Ganache over the entire cake and serve with a generous helping of whipped cream.
