BBQ glazed chicken with Ultimate spicy pasta salad

BBQ glazed chicken with Ultimate spicy pasta salad

2kg chicken braai pack
Salt and freshly ground black pepper to taste
Woolies original braai marinade
1 X 360g Garlic butter filled ciabatta

For the pasta salad
3T canola oil
2 cups corn
385g Extremely Creamy Mayonnaise
50g vindaloo curry paste
3/4 cup milk
4 spring onion stalks, roughly chopped
1 carrot, grated
500g Fusilli Tricolore Pasta, cooked as per the instructions
250g streaky bacon, cooked int he oven until crispy

For the homemade bean salad
1 X 400g can black beans
1 X 400g can painted lady beans
4 stalks spring onion, finely chopped
1 red pepper, diced
2 jalapeños, cut into thin rings
1/2 cup Woolies smokey BBQ marinade
4T onion marmelade
4T Woolies hot chakalaka
4T freshly chopped parsley

Over medium heat coals, or in a griddle pan over a medium heat. Add the chicken pieces to the grid or griddle pan and season lightly. Turn the chicken every 5 minutes to ensure even cooking and browning. After about 20 minutes the chicken should be well browned and almost cooked through. Begin brushing the chicken with the marinade turn every few minutes to ensure the marinade doesn’t burn on the chicken. Continue coating the chicken in the marinade until the chicken is perfectly glazed, making it sweet and sticky.

For the pasta salad:
Heat the oil over a medium heat before adding the corn and cooking until charred and slightly blistered. Add the corn to a large mixing bowl along with the mayonnaise, curry paste, milk as well as the spring onion and carrot. Mix together until a tangy, spicy sauce is formed.
Add half the sauce to the cooked pasta and mix well before allowing it to rest for 10 minutes. After resting add the remaining dressing and toss with the crispy bacon that has been roughly chopped.

For the bean salad.
Combine the beans with the spring onion, red pepper, jalapenos, BBQ marinade, chakalaka and finally the parsley. Give it all a good mix and set aside for a few minutes before serving.
Serve the chicken with the pasta and bean salad
