Banana fritters with chocolate fudge sauce

2 cups self-raising flour
1/2t bicarbonate of soda
1 1/2 cups soda water
100g dark brown sugar
2 free range eggs
4 ripe bananas, mashed (the riper the better)
Oil for deep-frying

Icing sugar for dusting

For the chocolate fudge sauce
1 1/2 cups cream
2T butter
200g milk chocolate

In a food processor: Blend together the flour, bicarbonate of salter, water, sugar, eggs and bananas, blending until smooth but thick batter forms. Allow the batter to rest while preparing the sauce.
Heat the cream and butter together in the microwave, heating until the butter has melted through. Roughly chop the chocolate and add it to the hot cream. stirring until smooth and silky.
Heat the oil for deep-frying: Using 2 tablespoons, spoon some of the batter into the oil, be sure not too overcrowd the pot. Cook for about 2-3 minutes to ensure the fritters don't brown too much. remove them from the oil and place on absorbent kitchen paper.
Add the fritters to a serving platter and dust with the icing sugar before drizzling over the chocolate sauce and serving with some whipped cream.
