Balsamic Blueberry Flapjacks and a Chocolate Balsamic Sauce

Balsamic Blueberry Flapjacks and a Chocolate Balsamic Sauce

Chocolate balsamic sauce
½ cup balsamic vinegar
2 Tablespoons sugar
60g Dark chocolate
 
In a pan combine balsamic with sugar and reduce over a medium heat. Remove from the heat and stir in dark chocolate.
Pour over a chocolate cake or fresh berries
 
Balsamic blueberries poured over lemony ricotta flapjacks
4 eggs, separated 
300g ricotta
1 lemon, zest
2T sugar
150g self-raising flour
2 cups frozen blueberries
6 Tablespoons balsamic vinegar
½ cup sugar
 
To make the flapjacks
Whip the egg whites until stiff.
Mix the yolks, ricotta, zest and sugar.
Add the flour and fold in the whites.
 
Heat a non-stick frying pan sprayed with non-stick spray over a medium heat.
Spoon mixture into the pan and spread slightly with the back of the spoon.
Cook on either side until golden brown and cooked. Serve with balsamic blueberries.
 
For the Balsamic Blueberries
In a saucepan gently heat 2 cups frozen blueberries with 6 T balsamic vinegar and 1/2 cup sugar until the sugar has melted and the blueberries have burst.
