
Bakers® Mzansi Christmas Cracker Trio

Ingredients
4 BAKERS Salticrax® crackers
½ cup biltong slices
½ cup cream cheese
2 figs, cut into quarters / sweet chilli sauce
4 BAKERS Wheatsworth® crackers
¼ cucumber, cut into small dice
1 tomato, flesh only, cut into small dice
½ red onion, cut into small dice
1 tbsp olive oil
1 tsp vinegar / lemon juice
½ cup double thick plain yoghurt
1 tsp cumin
½ cup butter chicken / tikka chicken pieces, cut into bite size
Salt and pepper
1 piece boerewors, cooked and cut into 1cm disks
½ cup spicy chakalaka, warmed
½ tin sweetcorn

Fresh coriander and micro herbs to garnish
Method
For the BAKERS Salticrax®, smear the cream cheese generously on the base of the crackers. Add a few pieces of biltong on top.
Carefully add the figs / chilli sauce on top, and garnish with microherbs.
For the BAKERS Wheatsworth® crackers, combine the cucumber, tomato, red onion, olive oil and vinegar in a bowl, with a pinch of salt and pepper. Mix well and set aside.
For the cumin yoghurt, simply combine the yoghurt and cumin, with a pinch of seasoning and mix well. Set aside. To assemble, start with a base of salsa, followed by the chicken chunks, and finally lashings of the cumin yoghurt. Garnish with fresh coriander.
For the BAKERS Mealmates®, puree the corn in a blender until smooth and slightly thickened. Add more corn kernels if need to achieve desired consistency. Smear the corn puree onto the base of the BAKERS Mealmates®, followed by slices of boerewors, and topped with chakalaka.
Garnish with coriander or microherbs and enjoy!
