
Bakers® Good Morning Bran Rusks Apple Crumble

For the filling :
3 Apples of choice ( peeled, cored and cut into 8 equal size wedges )
3 Pears of choice ( peeled, cored and cut into 8 equal size wedges )
½ cup Castor Sugar
1 tsp Vanilla Extract
For the Crumble :
1 tbsp Mixed Spice
175g Flour
110g Castor Sugar
110g Butter, cubed ( cold )
4 Bakers® Good Morning Bran Rusks, broken into small bite size pieces
For the caramel :
¼ cup Butter
½ cup Brown Sugar
½ tsp Salt
½ cup Cream
· Pre-heat oven to 200 degrees Celsius. For the filling, place the apples and pears in a large pot. Add the castor sugar, and simmer on a medium heat for about 20-30 minutes, until the fruit begins to stew and soften in its own cooking liquid.
· Once the fruit is soft and sticky, add the vanilla and remove from the heat. Set aside.
· For the crumble, combine mixed spice, flour, and sugar. Mix. Add the butter cubes and rub the dry mixture into the flour, to form a breadcrumb like texture. Bake on a lined tray for roughly 15-20 minutes, tossing every 5 minutes to cook evenly. Remove and allow to cool, then add your Bakers® Good Morning Bran Rusk Pieces.
· For the caramel, melt the butter in a pot over medium heat. Add the sugar, salt, and cream, and stir until well combined. Bring to a boil for roughly 5 minutes, while scraping down the sides of the pot with a spatula. Remove from heat and set aside for plating.
· To assemble, spoon your apple pie filling into a mug / ramekin. Top generously with your crumble mixture, and finish with drizzles of caramel sauce. Serve immediately and enjoy! For an extra treat, serve with a scoop of ice cream or custard!
