Bakers Snacktime® Festive Platter

Snacktime Festive Platter 
For the Parmesan cream and balsamic tomato
½  c cream cheese, whipped
1 c grated Parmesan cheese
Fresh thyme leaves, chopped
Pinch of salt and pepper
Cherry tomatoes, sliced in half
¼ c Balsamic vinegar
1 T brown sugar
Fresh basil

In a bowl, combine the whipped cream cheese with the parmesan cheese. Season with a pinch of salt and pepper and fold through the chopped thyme. 
For the Balsamic tomatoes, place the slices tomatoes, balsamic vinegar and brown sugar into a saucepan. Add the basil. Allow to cook over a low heat until the liquid has reduced, but the tomatoes still hold their shape. Remove from heat. 
Dollop the parmesan cream onto an Ancient Grain Provita, garnish with a tomato and fresh herbs. 
For the mackeral pate
200g smoked mackerel fillets, skinned and flaked
100g crème fraîche/cream cheese
1 T horseradish cream 
Juice 1 lemon
3-4 sprigs fresh dill
Pickled onion
Half red onion, sliced
¼ c red wine vinegar
1T brown sugar
¼ c hot water
Place the onions in a bowl and pour over the hot water. Allow to stand for a few minutes, then drain out the water. Add the vinegar and sugar, mix through and serve with the mackeral pate on a Snacktime Cream crackers. 
Avo and pastrami with pomegranate
1 avo, mashed with fresh coriander,spring onion and a squeeze of lemon
200g pastrami/salami
pomegranates
micro herbs
Add dollops of the mashed avo to Salticrax. Top with shavings of pastrami and garnis with pomegranates and micro herbs
Arrange the topped biscuits in the shape of a wreath
