Bakers Snacktime Crusted Mozzarella

Bakers Snacktime Biscuits, crushed
200g mozzarella, cut into chunky fingers, frozen
1 cup flour, seasoned with salt and freshly ground black pepper
3 free-range eggs beaten
1t garlic salt
1t dried parsley
Salt and freshly ground black pepper to taste
Oil for deep frying
Ensure that your mozzarella is frozen before you begin working with it, this will ensure that they don’t over-cook and have a crunchy outside.
Coat the fingers in the seasoned flour before dipping in the beaten egg. Combine the Bakers Snacktime biscuits with the garlic salt, parsley and some seasoning before rolling the fingers in the crumb. For an extra thick crunch, return the crumbed fingers to the egg then back into the Bakers Snacktime biscuit crumb. Allow the fingers to rest for 15 minutes in the freezer.
Heat the oil for frying: Carefully add the fingers to the oil and fry until golden brown and crisp. Remove from the oil and place on absorbent kitchen paper, seasoning lightly.
Once cool enough serve the fingers with your favourite dipping sauce
