Bakers Choice Assorted Hidden Center Cake

For the cake:
1¾ cake flour
2 cups sugar
¾ cup good quality cocoa
1½t bicarbonate of soda
a pinch of salt
2 free range eggs
1 cup buttermilk
½ cup salted butter, melted
1t vanilla extract
1 cup hot water
chocolate butter cream, prepared
200g Bakers Choice Assorted

Preheat oven to 180C. Combine the flour, sugar, cocoa, bicarb and salt. In a separate bowl beat together the eggs, buttermilk, melted butter and vanilla with the hot water. Add the dry ingredients to the wet ingredients mixing to form a smooth batter.
Prepare a dish that is oven proof that will either give you a domed shape or a shape which allows you to cut cake out from the center but still keeps the outer shape of the cake.
Bake for 30-35 minutes or until a cake test comes out with some crumbs attached to it after testing. Allow the cake to cool before remove from the baking dish/tin. Carefully remove the center of the cake, creating a space for the biscuits to be added.
Add the Bakers Choice Assorted biscuits then cover with the serving dish or cake stand then turning over to secretly seal the biscuits inside.
Begin icing the outside of the cake with the prepared icing and use some of the biscuits for decorating the outside of the cake before serving.
