Baked Nectarine
with Ginger, Honey & Thyme
Recipe by Carey Erasmus
4 ripe nectarines, halved and stones removed with a dessert spoon
30 ml fresh lemon juice
10 ml grated ginger
125 ml Muscavado sugar
To serve:
Fresh thyme leaves
Honey for drizzling
Double thick Yoghurt
Method:
Preheat the oven to 190°C.
Place the nectarines in a medium buttered baking dish and drizzle with lemon juice.
Top each one with the ginger and sugar.
Bake for +- 30 minutes (depending on how ripe the nectarines are).
Serve with double thick yoghurt and a drizzle of honey. Garnish with a few thyme leaves.
