Bacon wrapped chicken roast

Woolies deboned smoked chicken
About 10 sage leaves
500g woolies Back wood smoked bacon

For the glaze: combine
200g Poultry Glaze
1 cup 100% freshly squeezed Clemengold juice
1kg Woolies Frozen Mashed Potato, prepared as instructed with butter


Add the chicken to a roasting tray before dotting with a few sage leaves. Cover with the bacon and use toothpicks to secure the bacon to the chicken sealing in the sage.
Place in the oven to roast at 180’C for 20 minutes. Begin glazing the chicken with the mixture of the poultry glaze and orange juice. Glaze every 5-10 minutes until the roast is perfectly sweet and sticky.
Allow the roast to cool slightly before slicing and serving with the buttery mash and leftover glaze as a sauce to accompany the dish.
