Baby Marrow Carbonara

Serves: 4

Cooking time: 20-25min

2 T olive oil
4 garlic cloves, minced 
1/4 cup Italian parsley, chopped
700g baby marrow cut into julienne slices or ribbons
3 Free range egg yolks
1 cup Cream
Handful of Parmesan, grated
Dried Chilli flakes, salt and freshly ground black pepper to season.

Heat the oil in a frying pan and add garlic and parsley. Beat the eggs, cream and Parmesan together. Toss in the baby marrow into the pan and quickly stir fry for a couple of minutes. Now add the egg mixture and toss through quickly. Season.
