Apricot Jam glazed gammon
All Gold Apricot Jam glazed gammon
1 celery stalk
Zested peel of 1 orange
450g All Gold Connoisseurs Lite Apricot Jam
Place the gammon, carrot, onion, celery and the orange peel in a pot cold water. Ensure that there is enough water to cover all the ingredients.
Bring to a simmer over a medium heat before reducing to low allowing the water to gently bubble on a very low simmer. Cook the gammon for 1 hour before taking out the water.
Allow the gammon to cool slightly before carefully removing the outer layer of fat. Score the fat before placing on a roasting dish and browning the fat in an oven preheated to 200C.
After the fat turns golden, about 15-20 minutes begin glazing the gammon with a single layer of the apricot jam that has been thinned by simply being heated over a medium heat.
Once the first layer has glazed the gammon and become sticky in the oven begin adding another layer after every 10 minutes until the gammon is well glazed, about 4 layers.
Remove the gammon from the oven and all to cool for 30 minutes before slicing and serving. Or cool and serve at room temperature.
