Apple, berry and hazelnut crumble

Apple, berry and hazelnut crumble

Serves: 6
Preparation time: 10 minutes
Cooking time: 30-40 Minutes
 
FILLING
 
1kg Honeycrunch apples
2Tbs Demerara sugar
350g Frozen berry medley, defrosted and drained
 
CRUMBLE
 
75g Cold butter, cut into small cubes
125g Flour, sifted
2Tbs Cinnamon
100g Demerara sugar
100g Blanched hazelnuts, roughly chopped
50g Oats
 
CINNAMON MASCARPONE
 
250g Mascarpone cream cheese
2Tbs Icing sugar, sifted
½ tsp Ground cinnamon
 
To serve
1 pack Mini stroopwafel bites
 
Carefully combine the apples and berries and spoon into a shallow ovenproof pie dish.
Spoon the crumble mixture over the fruit, spreading it right up to the edges of the dish, and pressing it down firmly.
Bake for 30-40 minutes, until the topping is well-browned and crisp.
Combine the mascarpone, icing sugar and cinnamon.
Chill until ready to use.
Serve the crumble in bowls with a dollop of cinnamon mascarpone and a mini stroopwafel.
