For the dough
1 cup cake flour
2t baking powder
1 free range egg
6T salted butter, plus 1T extra
100ml Amasi buttermilk

For the cinnamon syrup
3/4 cup caster sugar
5T ground cinnamon
2 cups boiling water
1T salted butter

Combine the cake flour and baking powder together in a mixing bowl. Add the butter by crumbling it into the flour mixture until it resembles large breadcrumbs. In a separate bowl combine the egg and milk before pouring it into the floured mixing through to form a dough.
Bring a pot of water to the boil with the extra tablespoon of butter. Using 2 tablespoons, carefully drop spoonfuls of the dough into the boiling water, cover with a lid and simmer in the boiling water for 10-15 minutes, or until cooked through.
Remove the dumplings from the water and place in a baking dish. combine the sugar and cinnamon before sprinkling half over the dumplings and combining the other half with the water and butter. Stir until the butter is dissolved. Pour in the buttery water mixture, cover with a lid and place in an oven preheated to 200C to bake for 15-20 minutes before serving.
