African starter spread

Kelewele and shrimp sticks
1 plantain, cut into thick rings
1 small onion, chopped
½ Tbsp stock cube
White pepper
1tsp nutmeg
1tsp ground clove
1tsp ground ginger
1tsp chili pepper
1 pack of Shrimp/ medium prawns
1tsp crushed chili/ chili flakes
1tsp fish seasoning

Puff Puff
250g flour
80g sugar
15g yeast
5g salt
½ nutmeg ,grated
½ tsp cinnamon
500ml warm water

Suya Spice
½ cup ground Kuli Kuli / roasted ground nut powder
½ cup ground ginger
¼ cup chili powder
¼ cup paprika
¼ cup onion powder
¼ cup garlic powder
½ Tbsp salt
1 beef stock cube

Beef Suya sticks
200g beef fillet, thinly sliced
Salt & pepper
Chili powder
Suya spice

Zobo juice
2 cups Zobo leaves( hibiscus leaves)
1 pineapple, chopped
1 cup sugar
5 cups water
1 root ginger

For the kelewele and shrimp

Combine all the spices. Season the plantain with the spice mix and fry until golden brown. Pat dry with some paper towel and adjust the seasoning with the spice mix.
Season the shrimp with the spice mix and add to a heated pan with the onion and sauté until the shrimp is cooked and the onions are translucent.
