ABC Chocolate Brownies

Recipe makes 24 brownies
Dimensions: 4cm w x8cm l x3cm h
 
500g dark chocolate roughly chopped
500g unsalted butter
9 medium eggs, plus 3 yolks
200g Selati Demerara sugar
200g Selati Castor Snow
75g Green &Black’s cocoa powder
120g plain flour
 
Preheat the oven to 180˚C.
Line trays with baking parchment.
Melt the chocolate with the butter over a pan of hot water, cool slightly.
Whisk the eggs and yolks with the sugar until pale and thick.
Fold the melted chocolate into the eggs.
Sieve the cocoa and flour into the mixture and fold everything together thoroughly
Pour into tin and bake for 20-30 minutes. Cover with foil and allow to cool completely in the tin.
Needs to gooey in the middle but not runny.
