5 Ingredient chicken fried rice

4T canola oil
435g Woolies Easy to cook Julienne Stir fry mix
1 kg Woolies frozen savoury rice
1 Woolies rotisserie chicken, shredded
2 X 100g Easy to cook coconut stir fry sauce
Salt (if needed)
2 spring onions, thinly sliced to garnish

Heat the oil over a high heat. (The oil is the bonus ingredient that you should already have in the cupboard, so that one doesn’t count.)
Add the veggies and stir fry until the caramelise slightly but are still crunchy. Add the rice add toss through, continuously stirring while its cooking. You could make this dish in one very large pan but I've found preparing it in 2 batches works best.
Add the chicken and combine with the other ingredients before pouring in the sauce and stirring through. Taste if any extra seasoning is needed before adding salt.
Divide into serving dishes before topping with a garnish of spring onion.
