Slow Cooked Oxtail
glazed in chipotle and chocolate sauce

For the oxtail
Oxtail 2kg
Celery stalk 1, roughly chopped
Carrots 2 roughly chopped
Onion 2 roughly chopped
Garlic 3 cloves, crushed
Peppercorns 8
Bay leaves 3
 
For the sauce
Red onion1, roughly chopped
Garlic cloves 5, roughly chopped
Canola oil 4T
Chipotle peppers 5

Brown sugar 4T
Tomato paste 3T
Apple cider vinegar ½ cup
Worcester sauce 3T
Water ½ cup
Salt and freshly ground black pepper to taste
100g UTZ dark chocolate
 
1 For the oxtail: Combine all the ingredients in a large pot add enough water to just cover the ingredients.
2 Place in the oven to cook for 2 hours or until tender. Remove the oxtail and discard the rest.
3 For the sauce sauté the onions and garlic in the oil over a medium heat until caramelized. Add the remaining ingredients to the pot and cook over a low heat for an hour allowing the sauce to reduce slightly. Also note the chipotle peppers should be hydrated at this point.
4 Add the mixture to a blender and blend until smooth. Return to the pan and add enough chocolate to give a hint of cocoa. Stir through.
5 Heat the oxtail in a pan with a little oil over high heat. Add some of the sauce and toss to coat the oxtail.
