Roly-Poly served with Clover Classic Custard

For the dough
2 cups cake flour
½ tsp salt
2 tsp baking powder
100g butter
1 large egg, lightly beaten
¼ cup milk
¾ cup fine apricot jam
Clover Classic Custard to serve
Preheat the oven to 180°C
Combine the flour, salt, baking powder and butter in a bowl. Rub together with your fingers until it reaches a breadcrumb texture. Add the egg and just enough  milk to form a stiff dough.   

Lightly dust a work surface with flour and roll out the dough in a rectangular shape to about 7 – 10mm thickness. Brush the apricot jam onto the dough.  Roll the dough up like a Swiss roll and place on the greased oven tray. Bake until cooked through, about 1 hour. 
Slice the Roly-Poly and serve with a dollop of Clover Classic Custard
